<p>To make icewine, the grapes are left on the vine until after the first frost. The grapes must be picked late in the year - after November 15, early in the day - before 10 am, and temperatures must not be higher than minus 8 degrees Celsius. At this temperature the grapes are frozen and are as hard as marbles. When the grapes are in their frozen state, they are pressed. This leaves a highly concentrated juice, very high in acids, sugars and aromatics. This tea celebrates the flavour of icewine and is a lovely complement to any meal.</p>
